I have a thing for Quiche, it's true. It started many years ago when my husband took me on a dream trip to Europe.

We were waiting at the train station to take the train to Rome and wanted to purchase some food to go on the train. We found a small snack shop and got baguettes, cheese and wine.

They had a deli section with a beautiful glass display showcasing the baked goods and treats to go.
It was there that I saw the Quiche behind the display, so appealing. There was something about that display that called, no demanded my attention.

The quiche was cut into 1/4 pieces. Big triangular pieces of goodness just waiting to be purchased. I had to have one! They were cold, not warm, but I didn't care... I had to have one....
The clerk packaged it in a crisp white parchment pocket and handed it to me. I took one bite and the rest is history. I became a big fan.
Fast forward to today, I'm making these for my family to enjoy, yet secretly feeling a bit selfish since I get to eat them too.
My husband asked me to make a quiche yesterday and I was excited to oblige. I had not made one in a long time.
Making Quiche is actually really easy. It's main ingredient is Eggs of course, but oh the goodies you can add to this! I got so excited I immediately created a new challenge for me... I'm calling this the

12 Days of Quiche
Beginning November 1st, I will be posting 1 Quiche recipe per day, sharing my new finds, as I am experimenting with new ingredients.

For this recipe you'll need:
1 cup of cherry tomatoes
1 cup of mozzarella cheese
1 tblsp minced garlic
1 1/2 cup of chopped spinach
1/3 cup of parmesan cheese
1 cup milk
4 Eggs
1 ready made Pie Crust
salt and pepper to taste
Directions:
Preheat oven to 350 degrees.
In a bowl, whisk eggs, Parmesan cheese, garlic, salt and pepper, and milk and set aside.
Add chopped spinach and chopped ham into the ready made pie crust.
Place pie onto a baking sheet and place into oven.
Bake for 50-60 min or until center of quiche is firm.
Once baked, remove from oven and let cool for 10 minutes, then serve.
