Gluten Free- Maple Thumbprint Cookies!

My youngest Daughter has Type 1 Diabetes, so I'm always looking for ways to make yummy treats for her that are low in Carbs as well as sugar. This one is just perfect as it is only has about 4 carbs per cookie and the maple syrup has low natural sugar which makes this cookie a Perfect Treat!


What about taste you say? Delicious! Really!

It was a wholesome nutty taste due to the Almond flour and the Maple syrup adds a rich note of sweet dark molasses.


It reminds me of a Gingerbread cookie, without the spices.


With only 5 ingredients to make these cookies, you'll love the simplicity and ease of this fabulous recipe!


Gluten Free foods don't always taste the best, let's be honest, but I can say that this cookie had me reaching for more!


For this recipe, you'll need:


1 Cup of Almond Flour

3 Tablespoons of Unsalted Butter

3 Tablespoons of Maple Syrup

1/2 teaspoon vanilla extract

1/8 teaspoon salt


I'm using my favorite Thritop Stand Mixer! I absolutely love this thing! You need one! Get yours here https://amzn.to/2ZZ0cIq

Mix all ingredients until well mixed.


Using a small cookie scoop, or a table spoon, scoop out and form a ball and place on a parchment paper covered cookie sheet.


I added a tiny bit of Trick or Treat #Yummallow Baking mix in the center but you can add anything here. Traditionally you would add a teaspoon of jam but be creative!💕


My daughter loves these cookies, she’s asked me to play around with flavors so I’ll be playing with pumpkin spice, chocolate and peanut butter flavors…. Stay tuned!


Preheat your oven to 350 degrees. I'm using my counter top Convection oven from OSTER!

Bake for 8-10 minutes or until a light golden color.

Fair note, using a convection oven is different than a regular oven. You bake for a little less time. Every oven is a little different so make sure you watch your cookies while they’re in the oven so they don’t over cook.


Take out of oven and let cool for a minute then transfer to cooling tray.
