Mushrooms in a pie?... a memory from my trip to London

Before my husband and I got married, my husband took me on a dream trip to Europe.



We flew from Los Angeles to London on British Airways. It was my first trip abroad and I was so

incredibly excited to learn many things.


We stayed at a Pub Bed and Breakfast Inn and it was there I was introduced to the infamous English Breakfast. The breakfast consisted of two fried eggs, sausage, bacon, fried buttered mushrooms, tomato slices and toast accompanied by hot coffee or tea.


Can I just say Delicious? yes, we had this every day and it was sooooo good!


I have so many wonderful memories of that first trip and not enough time to write about all of it, but I'll be sharing throughout my blogging journey.


When I was designing my 12 days of Quiche plan, I was thinking of memories that meant something special to me. Foods that I ate from my travels. Things I really felt connected to...


For Day 3, I was thinking of Mushrooms. I love mushrooms... especially fried buttered mushrooms...yum!



I wanted to bring fried buttered mushrooms to my Quiche party so I came up with this recipe.


Mushroom Feta Quiche


If you love mushrooms, you're going to love this recipe! And it is so easy to make!


Let's bake up some goodness! Ready?


For this recipe, you'll need:


4 eggs

1 cup of sliced mushroom

2/3 cup of feta cheese

2/3 cup of mozzarella cheese

1 tbsp minced garlic

1 cup milk

1 ready made pie crust

green onions for decoration

salt and pepper to taste


Start by frying the sliced mushrooms in butter until well cooked. Let cool 5 minutes.



While mushrooms are cooking, In a bowl, mix 4 eggs, milk, feta cheese, garlic, salt and pepper and set aside.


Preheat over to 350 degrees.


Set aside a few mushrooms for the top decoration. Then add the rest of the mushrooms to the egg mixture and mix well.



Pour egg mixture into ready made pie shell.


Bake for 20 minutes, then take out of oven and add mushrooms and sliced green onions as top decoration, then return to oven.


Bake for an additional 25-35 minutes or until the pie is firm.


Let Quiche cool for 10-15 minutes, serve and enjoy.



Guys, this is soooo good! It's brings all the memories back from my first trip to London... eating those tasty mushrooms.
